Evolution of drinking jars

Jars with screw-on lids may seem like a simple idea, but someone had to think of it first. That task fell to John Landis Mason, a tinsmith from the US city of Philadelphia. His Mason jar was patented in 1858. The main purpose for the jars at that time was to assist with the important task of preserving food, especially as refrigeration was not widely available. The jars encompassed a huge variety of lids and styles (with a few battles over patents along the way). The jars are still used today for preserving food, particularly by home cooks. With the arrival of summer, it has never been easier to explore the world of preserves. One of the easiest ways to get started is with flavoured spirits, oils and vinegars, and there are so many options for these that the enthusiastic cook will be spoiled for choice. Wares of Knutsford have just launched a new range of Howarth corked bottles, which are perfect for this type of preserving.

Infused Spirits in corked bottles

When people think of homemade spirits, sloe gin is the one that usually comes to mind. Nothing could be simpler than making it. Just pick the sloes once they’ve ripened, usually towards the end of September, wash them and place them in corked bottles with gin and plenty of sugar. Turn the bottles every week and by Christmas, the sloe gin should be ready.

Sloe gin is just one flavoured gin, however. All sorts of seasonal fruits can be used to make infused gins, such as rhubarb, elderflowers, raspberries, plums and blackberries. Herbs too make excellent gin flavours. Mint and ginger are great in gin, as are fennel, lavender and lemon verbena.

Cordials

For a non-alcoholic version, fruit cordials are a delicious summer thirst-quencher. Elderflower is a firm favourite, but many other fruits are suitable for cordials and offer a way to use up those inevitable summer gluts. Fruits need to be strong enough to be diluted and still taste good, so apple is best avoided. Blackcurrants are a good choice, as are plums later in summer. For a winter cordial, try Seville oranges for a slightly less sweet drink that will keep for up to 3 months.

Flavoured oils and vinegars

Another easy step into the world of preserving is flavoured oils. Starting with a good-quality oil, it’s possible to create an enormous variety of flavoured oils simply by adding herbs, spices, nuts or even citrus fruits. Using traditionally-styled bottles with corks, it’s possible to create unique gifts for Christmas or other occasions. Sourcing the freshest spices and home-grown herbs will give the best results. Ideas for infused oils include chilli flakes, rosemary, basil, garlic and lemons – although not all in one infusion, of course!

Infused vinegars are also amazingly easy to make, with seemingly endless choices. Try fennel with orange, for an exciting taste that is perfect splashed on green salads. A berry vinegar, using blackberries, blueberries or raspberries, with a few leaves of fresh mint thrown in too, makes an incredible-tasting vinegar. Again, using the Howarth bottles with corks for this project, these vinegars make inspired, thoughtful gifts.

The range includes serveware and cookware in the traditional white and blue enamel colourway and also in some modern-looking colours, such as black, red and blue, and an extensive range of cream enamel cookware. These are made by Falcon from high-quality steel with a double enamel coating and feature a smart grey rim. Enamelware is popular in cooking for its even heat distribution and durability – these items will last a lifetime, and probably longer!

Our cream enamel cookware range includes baking pans in 29cm and 34cm sizes. These come with useful deep sides to keep the contents of the pan safe and curved corners for easy cleaning. There are also a 22cm pie dish for traditional cooking and a 26cm mini roasting pan. You can also buy oval-shaped covered roasters in 22.5cm and 30cm sizes, which help to ensure roasted meat remains moist and tender by self-basting. A drinks dispenser is one of those things you never realised you needed; however, once you have one, you will wonder how you ever lived without it! We stock a variety of drinks dispensers by Kilner, all of which are perfect for your summer events. Used outdoors they keep flies out of drinks and keep the contents fresh and clean, with easy, one-handed access courtesy of a tap at the bottom of the jar.

The standard dispensers are designed in the same style as the traditional Kilner preserving jar in high-quality clear glass in a round shape with a heavy duty clip fastening and an orange rubber seal. The wide neck makes it easy to add fruit, ice or herbs and to refill. The jars are embossed with the familiar Kilner logo and are available in five- and eight-litre sizes, which are sold singly. This means they hold plenty of drinks for garden parties, weddings, children’s birthday parties, fetes and galas, indoor or out. They can be used for soft drinks or cocktails, milkshakes and smoothies, or even just water, but are not suitable for very hot drinks. The dispensers should only be used for liquids with a maximum temperature of 80°C.

Jars and bottles are notoriously difficult to wrap in the traditional style and our customers were looking for a better way in which to present preserves.

Since we introduced the range, it has been hugely popular and we have even added a number of other packaging items to the department. If you are planning to give homemade preserves as gifts or to sell your own produce, the right packaging can help your jars to look smart and professional.

Our specially designed boxes make it incredibly simple to package jars and bottles, either to give as gifts or to sell as a set. Choose from natural brown card or green. The boxes come flat packed for easy delivery and are easy to assemble at home. You can choose two- or three-jar models in small and medium sizes for standard jars, and there are also two- and three-jar versions for tall, slim jars.

Making your own wedding favours is increasingly popular as a way to both personalise and save costs at your wedding. At Wares of Knutsford we have a great supply of packaging to help you make rustic wedding favours, modern wedding favours or any other kind of wedding favours – and plenty of ideas to help you fill them!

One of our new products this season is a rustic-style box ideal for small wedding favours. It is made of sturdy corrugated cardboard in a natural brown colour and sold in packs of ten. The box measures 5cm by 5cm by 5cm, which makes it the perfect size for both 30ml and 40ml mini jam jars. We also find a number of artisan producers and crafters use these boxes, as they are perfect to present smaller items such as jewellery, homemade lip balms or sweets and chocolates.

Take a look at our packaging department for decorative materials, as simple accessories such as a piece of hessian string tied in a bow around the boxes really add to the theme of rustic wedding favours. You will also find a selection of ribbons, labels and gift tags that you can attach with a personal message for your guests. The Cinderella

Blend one apple with three carrots and one mango until smooth, then add six strawberries and the juice of seven freshly-squeezed oranges. Sieve before serving with plenty of ice.

If you are putting the effort into making dips, ensure you store them correctly in an airtight container such as a jar. Any of these dips would be brilliant as a dinner entree, served with toasted pitta bread and vegetable crudites.

Aubergine coriander dip

  • 1 aubergine
  • 1 clove of garlic, peeled
  • Zest and juice of one lemon
  • 2 tablespoons fresh coriander leaves, chopped
  • 120ml extra virgin olive oil

Pre-heat the oven to 200°C and roast the aubergine on a baking tray for about 45 minutes until softened. Allow to cool, then peel off the skin – it should come away easily if you pull it. Chop the aubergine flesh and whizz it in a blender for a minute or two with the garlic, lemon zest and juice, and coriander leaves. Keep blending and slowly pour in the olive oil until the mixture is fairly smooth. Season to taste.

Beetroot dip

  • 400g beetroot – whole, raw and unpeeled
  • 2 tablespoons extra virgin olive oil
  • Salt
  • 6 tablespoons Greek yoghurt
  • 2 cloves of garlic, peeled

Pre-heat the oven to 200°C. Rub the beetroot with a little oil and sprinkle with salt before wrapping in foil and roasting for an hour in the oven. The beetroot is ready when it is soft enough to easily insert the tip of a knife. Allow to cool for a while, then pull off the outer beetroot skin. Chop the beetroot, place in a blender with the other ingredients and whizz until smooth. Season to taste.

Artichoke and olive dip

  • 400g tin of artichoke hearts, drained
  • 10 black olives, stoned
  • 225g cream cheese
  • 250g mayonnaise
  • 1 egg
  • Half a red onion, finely chopped
  • 3 tablespoons grated parmesan cheese
  • 3 splashes Worcestershire sauce

Preheat the oven to 180°C. Whizz all the ingredients together in a blender until smooth, transfer to a baking dish and roast the dip for about 25 minutes until hot all the way through. Season to taste and serve sprinkled with cayenne pepper.
