With summer coming up, make sure you have a good supply of sauces ready for barbecues and outdoor entertaining! Served in proper bottles for sauces they’ll look professional but taste so much better than shop bought varieties.

Barbecue glass sauce bottles

  • 120g tomato ketchup
  • 2 tbsp soft dark brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp cider vinegar
  • Dash of Tabasco
  • 1 clove garlic, minced
  • Quarter tsp mustard powder
  • Quarter tsp salt

Add all the ingredients to a small saucepan. Heat on medium to reach simmering point then remove from the heat. Pour into bottles for sauces while still warm, seal and store in the refrigerator. Serve on the side or use as a marinade before barbecuing your meat.

Salad cream glass sauce bottles

  • Yolks of 2 hard boiled eggs
  • 2 tbsp English mustard
  • Juice of half a lemon
  • 1 tbsp caster sugar
  • 3 tbsp white wine vinegar
  • 150ml double cream
  • 150ml olive oil

Place the egg yolks, mustard, lemon juice, sugar, vinegar and cream into a food processor and blend until the mixture starts to thicken. Add the oil in a slow trickle so that the salad cream emulsifies and is smooth. Season to taste and decant into sauce bottles. Store in the refrigerator.

Pomegranate salad dressing

  • 4 tbsp pomegranate juice (shop bought or you can make your own: whizz the seeds of a pomegranate in a blender and sieve)
  • 4 tbsp extra virgin olive oil
  • 2 tbsp white wine vinegar
  • Some extra pomegranate seeds
  • Half a teaspoon caster sugar

Add all the ingredients to your bottle or jar, seal tightly then shake thoroughly until well combined. Store in the refrigerator for up to five days and serve over couscous, rice and green salads.

Ginger soy dressing

  • 2 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 2 tbsp caster sugar
  • Half an onion, chopped
  • 2 tsp fresh root ginger, chopped
  • 1 tbsp tomato puree
  • 2 tbsp vegetable oil

Add all the ingredients to a blender with a tablespoon of water and whizz for a minute or two until smooth, then pour through a funnel into the sauce bottles. Serve with barbecued tuna or steak and salad.
